Lemon Balm Pesto

  • ½ cup lemon balm

  • ½ cup parsley

  • 1.5 cups basil

  • Juice from 1 lemon

  • ½ cup olive oil

  • 3 cloves garlic, minced

  • Salt to taste



  1. Grind the herbs in a food processor or mortar and pestle.  If you don’t have either of these, finely chop . 

  2. Add the lemon juice and garlic. 

  3. Slowly drizzle the olive oil into the food processor, or if doing by hand, whisk it in. 

  4. Salt to taste. 

This is a wonderful addition to fish or served on spaghetti.  I dollop mine on fresh fried cod or baked salmon. Wonderful for a beautiful western Newfoundland summer evening!
