½ cup lemon balm
½ cup parsley
1.5 cups basil
Juice from 1 lemon
½ cup olive oil
3 cloves garlic, minced
Salt to taste
Grind the herbs in a food processor or mortar and pestle. If you don’t have either of these, finely chop .
Add the lemon juice and garlic.
Slowly drizzle the olive oil into the food processor, or if doing by hand, whisk it in.
Salt to taste.
This is a wonderful addition to fish or served on spaghetti. I dollop mine on fresh fried cod or baked salmon. Wonderful for a beautiful western Newfoundland summer evening!
