Smashed Garlic Potatoes
6 - 8 medium - baby potatoes
3 tablespoons olive oil
3 cloves garlic, pressed
1 tablespoon fresh thyme leaves or fennel seeds
1 cup of grated cheese
Kosher salt and freshly ground black pepper, to taste
Preheat oven to 500 degrees F.
Lightly grease a baking sheet
Boil water and cook potatoes until tender, about 15-20 minutes then drain.
Place potatoes onto baking sheet. Using a potato masher or the backside of a plate, carefully press the potatoes until flattened but still in one piece.
In a small bowl, prepare paste of olive oil, garlic and thyme. (Option: use just olive oil and fennel seeds) Spread over potatoes.
Place into oven and bake for 15 minutes.
Spread grated cheese over potatoes and return for an additional 5 minutes, or until golden brown and crisp.
