Smashed Garlic Potatoes


INGREDIENTS:

  • 6 - 8 medium - baby potatoes

  • 3 tablespoons olive oil

  • 3 cloves garlic, pressed

  • 1 tablespoon fresh thyme leaves or fennel seeds

  • 1 cup of grated cheese

  • Kosher salt and freshly ground black pepper, to taste

INSTRUCTIONS:

  1. Preheat oven to 500 degrees F.

  2. Lightly grease a baking sheet

  3. Boil water and cook potatoes until tender, about 15-20 minutes then drain.

  4. Place potatoes onto baking sheet. Using a potato masher or the backside of a plate, carefully press the potatoes until flattened but still in one piece.

  5. In a small bowl, prepare paste of olive oil, garlic and thyme. (Option: use just olive oil and fennel seeds) Spread over potatoes.

  6. Place into oven and bake for 15 minutes.

  7. Spread grated cheese over potatoes and return for an additional 5 minutes, or until golden brown and crisp.

  8. Serve immediately.
