Sugar Snap Peas with Mint

(as seen on allrecipes)


- 2 tsp olive oil

- 1/2 lb sugar snap peas

- 2 green onions

- 2 chopped garlic scapes or 1 clove chopped garlic

- pinch of salt

- pinch of pepper

- 1 Tbsp chopped fresh mint


- Heat oil in a large skillet over medium heat. Add the sugar snap peas, green onion and garlic. Season with salt and pepper. Stir-fry for 4 minutes, then remove from heat and stir in the mint leaves.
