Awesome arugula and avocado sandwich


- 1 avocado

- 1 cup arugula

- 1/2 tbsp lemon juice

- 1/2 tbsp olive oil

- 1 tbsp pumpkin seeds or chopped nuts (pecans are good)

- salt and pepper

- 2 slices whole wheat bread


- Whisk together the olive oil and lemon juice. Season to taste with salt and pepper. Pour over arugula and toss.

- Mash avocado and season with salt and pepper. Spread avocado on bread and top with arugula. Top with bread and enjoy.
