Seared Salmon with Strawberry Basil Relish


6 Salmon fillets

1 TBSP butter, melted

1/4 tsp salt

1/8 tsp freshly ground pepper

1-1/4 cups finely chopped fresh strawberries

1 TBSP minced fresh basil

1 TBSP honey

Dash freshly ground pepper


- Brush fillets with melted butter, sprinkle with salt and pepper. Heat a large skillet over medium heat. Add fillets, skin side up; cook 2-3 minutes per side or until fish flakes easily with a fork.

- In a small bowl, toss strawberries with basil, honey and pepper. Serve salmon with relish.
