Sugar Snap Pea Salad

Ingredients

 

  • 4 cups halved sugar snap peas

  • 1 cup diced English cucumber

  • 1/2 of a red onion (sliced thin)

  • 2 tbsp. chopped fresh dill 

  • 2 tbsp. chopped fresh mint 

  • salt/pepper to taste

Balsamic Vinaigrette

  • 3 tbsp balsamic vinegar

  • 1 1/2 tbsp Dijon mustard

  • 1 tbsp pure maple syrup

  • salt/pepper to taste

 

Instructions

 

  1. Add all the salad ingredients to a medium bowl and toss well.

  2. Whisk the vinaigrette ingredients in small bowl.

  3. Pour the vinaigrette over the salad and toss well.

  4. Serve at room temperature or chilled.
